Salmon Avocado Rice Bowl

| Avocado | 1 |
| Egg yolk | 1 |
| Green onion | to taste |
| White sesame seeds | 1 tsp |
| Warm steamed rice | 1-2 bowls |
| Sauce | |
| Soy sauce | 1.5 tbsp |
| Mirin | 1 tbsp |
| Sesame oil | 1 tsp |
| Sugar or honey | 1/2 tsp |
| Garlic and ginger (optional) | a small amount |

Cut the salmon into 2-3cm cubes.

Cut the avocado into similar-sized pieces.

Mix the sauce ingredients (soy sauce, mirin, sesame oil, sugar) in a bowl.

Gently toss the salmon and avocado in the sauce and let it marinate for about 5 minutes.

Place warm rice in a bowl and arrange the toppings on top.

Place the egg yolk in the center, sprinkle with green onion and sesame seeds, and serve.

Variations: - Add 1 tsp gochujang for a Korean-style yukke bowl - Add a squeeze of lemon juice for a refreshing poke-style bowl - Mix in a little mayonnaise for a richer flavor
